Baklava Cups

There is nothing like the sweet and nutty taste and crunch of some baklava. Here we recreated them in a way that captures the distinctive taste and memories of the traditional bakalva, but with a bigger pack of nutrients. More fibre means that both you and your gut bugs can enjoy these snacks (and support your blood sugars in the process!)






Healthy Baklava Cups

Makes 12 cups


Ingredients

For the base:

  • 130g Oat Flour

  • 50g Coconut Oil

  • 1.5tbsp maple syrup or honey

  • 1.5tsp cinnamon

  • 0.5tsp ground nutmeg

  • 0.5tsp ground cardamon

  • Pinch of salt


For the filling:

  • 1/2 cup walnuts, roughly chopped

  • 2tbsp pistachios, roughly chopped

  • 2tsp Cinnamon

  • 1tsp nutmeg

  • 0.5tsp cloves

  • 1/4th cup maple syrup or honey (can use less or more, until it reaches desired stickiness).

  • 1/2 tsp ground cloves

  • 1/4th cup maple syrup


Instructions:

  1. Add all the base ingredients to a bowl and stir

  2. In a seperate bowl, combine all the filling ingredients

  3. Scoop the base ingredients into greased muffin tray, about 1/3 to 1/2 way

  4. Top with the filling

  5. Bake at 180C for 10-12min, or until golden and solid.

  6. Serve and enjoy!
